Green tea is the category that keeps the original color of the tea leaves without fermentation during processing. It is the most natural of all Chinese tea classes. It’s picked, natural dried, and then fried briefly (a process called “killing the green”) to get rid of its grassy smell. Ideal brewing temperature: The best temperature to brew green tea ranges from 75°C to 80°C depending the age of the tea. Health benefits: Green Tea has high medical value and the least caffeine content of all Chinese tea categories. It can help regulate cholesterol and high blood pressure, improve skin conditions and improve blood flow. However, people are not encouraged to drink green tea daily due to its “cool nature” ( 寒 气). Pregnant women are discouraged from drinking green tea too. Popular types of green tea: Some of the most popular green teas include Longjing tea of Zhejiang Province (龙井), Huangshan Maofeng (黄山毛峰)of Huangshan Mountain in Anhui Province and Biluochun (碧螺春) in Jiangsu.
